Ingredients

    • For Scones:

    • Full box Scone Mix
    • 1 egg
    • 1/2 cup milk
    • 1/3 cup melted butter
    • For Topping:

    • 3 large eggs
    • 1/3 cup fresh lemon juice
    • 3/4 cup granulated sugar
    • 1 tablespoon finely shredded lemon zest
    • 4 tablespoons unsalted butter

Directions

    • For Scones:

    • Preheat oven to 400°F. Lightly grease a standard baking sheet. Combine egg, milk, and butter. Add mix. Stir until moistened (dough will be sticky). Use a spoon to evenly distribute batter on cookie sheet. Optional: Glaze top with egg wash. Bake for 13 to 15 minutes.
    • For Topping:

      In a stainless steel bowl placed over a saucepan of boiling water, whisk together eggs, sugar, and lemon juice. Cook, stirring constantly, until mixture becomes thick. Stir for approximately 10 minutes. Remove from heat and pour through strainer to remove lumps. Cut butter into small pieces and whisk together in the mixture until butter is completely melted. Add lemon zest and place in refrigerator to cool. Place spoonful of curd on scones, add lemon zest for garnish.
