Corona and Lime Cupcakes

Ingredients
For Cupcakes
- 19 oz Beer Bread Mix
- 12 oz beer (Recommended: Corona®)
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1/2 tsp baking powder
- 1/2 tsp baking soda
For Icing
- 1/2 cup butter, softened
- 1/8 tsp salt
- 1 tsp vanilla
- 16 oz powdered sugar
- 3 tbsp key lime juice
- 1-2 tbsp milk
- Lime zest
Directions
For Cupcakes
- Preheat oven to 350°F .Mix butter and both sugars until light and fluffy. Beat in eggs, one at a time. Stir in baking powder and baking soda. Add in beer bread, mix well. Stir in beer. Put into cupcake pan already prepared for being filled. Fill until 2/3 full. Bake for 20 minutes.
For Icing
- Combine butter, salt, and vanilla. Mix until creamy. Alternatively add powdered sugar and lime juice (1 tbsp at a time). Add milk until desired consistency. Ice cupcakes and garnish with lime zest.
