Caramel Apple Cake Balls

Ingredients
For Cake:
- Full box Apple Cake Mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup applesauce
For Frosting:
- 1/4 cup light brown sugar
- 10 tablespoons butter
- 1/3 cup heavy whipping cream
- 8 oz. cream cheese, softened
- 1/2 teaspoon vanilla extract
- Salt
- 1 3/4 cups powdered sugar
For Coating:
- 2 bags red Wilton® Candy Melts
Directions
For Bread:
- Preheat oven at 350°F. Lightly grease 9x5 loaf pan. Combine eggs, oil and applesauce. Add mix. Fold together until batter is smooth (about 1 minute).
- Pour batter into pan and spread, filling corners and leveling top.
- Bake for 55 to 60 minutes, or until a toothpick inserted comes out clean. Cool completely. Crumble into large mixing bowl. Set aside.
For Frosting:
- Melt brown sugar and 4 tablespoons butter in a saucepan over medium heat. Stir until sugar dissolves. Bring to a boil and remove. Whisk in cream, blending well. Cool at room temperature, stirring occasionally.
- Place remaining 6 tablespoons of butter and cream cheese in a large bowl and beat with a mixer on medium-high speed until smooth. Add vanilla and salt. Slowly pour in cooled brown sugar mixture while continuing to beat until smooth. Add powdered sugar gradually, beating well after each addition until completely smooth. Chill slightly for a firmer texture, stirring occasionally (about 35 minutes).
- Once cooled, fold together with cooled cake mixture and return to refrigerator for at least 30 minutes. This makes the dough easier to work with while rolling.
- Once firm, roll mixture into walnut sized balls and place on wax paper- lined baking sheet. Return to freezer to firm.
- Using double boiler, fill bottom halfway with water and bring to simmer. Remove from heat and pour in Wilton® Candy Melts, stirring until smooth. Using fork, gently drop and cover cooled cake balls, working quickly due to the candy's tendency to harden. Repeat process until all balls are covered. Return to freezer to solidify. Best served cold.
