Ingredients

    • For French Toast:

      Full box Beer Bread Mix
    • 12 oz. beer
    • For Batter:

    • 2 eggs
    • 1/2 cups milk
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon
    • Dash of ground nutmeg
    • For Apples:

    • 1 large apple of your choice, cut into cubes
    • 1 tablespoon butter
    • 1/4 teaspoon cinnamon

Directions

    • For Bread:

    • Preheat oven to 375°F. Lightly grease standard 9x5 pan with cooking spray or butter. Pour beer in bowl. Add mix. Quickly and firmly fold together for 20 to 30 seconds. Batter will be lumpy and sticky. Do not overmix.
    • Spread batter in pan, filling corners. Leave lumpy and uneven. Optional: Pour 1 to 2 tablespoons of melted butter or olive oil on top.
    • Bake for 50 to 55 minutes. Cool on wire rack for 30 to 60 minutes before cutting into 1/2 inch cubes.
    • For Cups

    • In a medium skillet, sauté apples with butter and cinnamon for about 5 minutes, or until soft. Set aside. In a medium bowl, mix eggs, milk, vanilla, cinnamon and nutmeg until well combined. Add bread cubes and apples. Mix together until bread is saturated and apples are well distributed. Using a regular size muffin tin, scoop mixture evenly into muffin cups. Bake at 350°F for about 20 minutes or until set and lightly golden brown.
    • Cool slightly before serving.
