Cookies and Cream Cake Balls

Ingredients
For Cake:
- Full box Vanilla Cake Mix
- 2 large eggs
- 1 stick butter
- 1 cup milk
For Frosting:
- 1/2 cup shortening
- 8 oz. cream cheese
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1- 5 tablespoons milk
- 1 1/2 cups. crushed Oreo® cookies
- 2 bags Wilton® Candy Melts (chocolate flavor)
Directions
For Cake:
- Preheat oven to 350°F. Lightly grease bottom and halfway up sides of a standard 8x8x2 pan with cooking spray or butter.
- Combine eggs, butter and milk. Add mix. Blend together until batter is smooth, approximately 1 to 2 minutes.
- Pour batter into pan and spread, filling corners and leveling top. Bake for 40 to 43 minutes or until a toothpick inserted in center comes out clean. Cool completely. Crumble into large mixing bowl.
For Frosting:
Cream together shortening, cream cheese, powdered sugar and vanilla. Add milk 1 tablespoon at a time until desired frosting consistency. Stir in crushed Oreo® cookies with a wooden spoon and blend well.- Fold together with cooled cake mixture and place in refrigerator for at least 30 minutes. This makes the dough easier to work with while rolling.
- Once firm, roll mixture into walnut sized balls using your hands, and place on wax paper-lined baking sheet. Return to freezer to firm.
- Using double boiler, fill bottom halfway with water and bring to simmer. Remove from heat and pour in chocolate candy melts, stirring until smooth. Using fork, gently drop and cover cooled cake balls, working quickly due to the chocolate's tendency to harden. Repeat process until all balls are covered. Return to freezer to solidify chocolate. Best served cold.
