Beer Bread Mini Loaves

Ingredients

    • Full box Beer Bread Mix
    • 12 oz. beer or soda water
    • 1 cup sharp cheddar cheese- shredded
    • 3 tablespoons fresh parsley - chopped
    • 1 tablespoon fresh thyme
    • 1 tablespoon fresh basil - chopped
    • 1 teaspoon cracked black pepper
    • 3 tablespoons extra-virgin olive oil

Directions

    • Preheat oven to 375° F. Lightly coat mini loaf pans with olive oil or cooking spray. Combine mix, cheese, parsley, thyme, basil and pepper together- blend well. Add liquid and 1 tablespoon olive oil to mix, folding together until dough forms (approximately 30 seconds). Portion batter 2/3 full in mini loaf pans and drizzle with remaining olive oil. Bake for 20 to 30 minutes, or until golden brown. Optional: 5 minutes before loaves are finished, sprinkle with extra shredded cheese.
