Fresh Herb Mini Loaves
- Makes: 6-8 Mini Loaves

- Tools Required: Mini Loaf Pans (I used a 2 1/2 x 3 1/2 size loaf pan in above photograph), Mixing Bowl, Spatula, Oven Thermometer
Ingredients
- Full box Beer Bread Mix
- 12 oz. beer or soda water
- 1 cup sharp cheddar cheese- shredded
- 3 tablespoons fresh parsley - chopped
- 1 tablespoon fresh thyme
- 1 tablespoon fresh basil - chopped
- 1 teaspoon cracked black pepper
- 3 tablespoons extra-virgin olive oil
Directions
- Preheat oven to 375° F. Lightly coat mini loaf pans with olive oil or cooking spray. Combine mix, cheese, parsley, thyme, basil and pepper together- blend well. Add liquid and 1 tablespoon olive oil to mix, folding together until dough forms (approximately 30 seconds). Portion batter 2/3 full in mini loaf pans and drizzle with remaining olive oil. Bake for 20 to 30 minutes, or until golden brown. Optional: 5 minutes before loaves are finished, sprinkle with extra shredded cheese.
