Pepperoni Bread
- Makes: 12-14 Slices or 1 Large Loaf

Ingredients
- Full box Beer Bread Mix
- 12 oz. beer or soda water
- 5-7 oz. pepperoni - pre-sliced or chopped
- 1 cup mozzarella cheese - shredded
- 1/2 cup cheddar cheese - shredded
- 2 tablespoons fresh thyme
- 2-3 tablespoons extra-virgin olive oil
Directions
- Preheat oven to 375° F. Lightly grease a standard 9x5 loaf pan with olive oil or cooking spray. Combine pepperoni, both cheddar and mozzarella cheeses, thyme and mix. Add liquid. Quickly fold together for 20 to 30 seconds. Spread batter into pan, filling corners. Leave lumpy and uneven. Drizzle with remaining olive oil. Bake for 50 to 55 minutes. Cool on wire rack for 20 minutes. Remove from pan and cool an additional 20 to 30 minutes before slicing.
