Onion & Garlic Beer Soup with Croutons

Ingredients
For Soup
- 4 lb. medium yellow onions - sliced thin
- 6 cloves of garlic- minced
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 12 oz. premium beer
- 5 cups beef broth
- 2 tablespoons sugar
- 1/4 teaspoon white pepper
- Large pinch of salt
- 1/2 cup parmesan cheese - grated
Two Choices For Croutons

- 2. Take four slices of our Classic Beer Bread and cut into 1/2-inch cubes. Sauté with 2 tablespoons of butter until golden brown.
Directions
- In a large pot over medium heat, melt butter and olive oil. Add onions and garlic- sauté until translucent. Stir in beer and beef broth, cover and simmer for 40 to 45 minutes. Add sugar, pepper, and salt. Divide soup into 6 bowls, add croutons and cheese. Place bowls on baking sheet and broil in oven until cheese begins to melt. Serve warm.
