Applewood Smoked Bacon & Gruyere Cheese Flatbread

Ingredients
- Full box Beer Bread Mix
- 12 oz. beer or soda water
- 1/2 lb. applewood smoked bacon - cut in 1-inch pieces and sautéed
- 1 1/2 cup gruyere cheese - thickly grated
- 2 tablespoons fresh rosemary - lightly chopped
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon coarse sea salt
Directions
- Preheat the oven to 400° F. Lightly grease baking sheet with olive oil. Combine mix, 3/4 cup cheese, 3/4 of sautéed bacon, 2 tablespoons olive oil and 1 tablespoon rosemary. Add beer and quickly fold together. Hand form batter on baking sheet 12 inches in diameter, and approximately 1 1/2 inch high.
- Add remaining bacon and cheese, pressing into batter surface. Sprinkle with remaining rosemary and sea salt, then drizzle remaining olive oil.
- Bake for 23-28 minutes. Cool 20 minutes before slicing in random pieces. Serve warm with dipping sauces or olive oil.

Take action!
I served this flat quick bread alongside grilled beef tenderloin with béarnaise sauce, spicy pommes frites and red leaf salad with shallot vinaigrette. I loved it because of the large pieces of thick gooey cheese and the great flavor of smoked applewood bacon. My guests loved it even more, making me think I should have served hamburger instead of expensive beef tenderloin!
