Vanilla Cake with Sour Cherries and Pecan Ice Cream

Ingredients
For Cake
- Full box Vanilla Cake Mix
- 2 large eggs
- 1 stick butter (4 oz.) - melted
- 1 cup milk
For Topping
- 1 cup dried cherries
- 1 cup boiling water
- 4 tablespoons brandy
- 1 1/2 pints vanilla ice cream- slightly softened
- 4 tablespoons semisweet chocolate - chopped
- 1/3 cup pecans - chopped and toasted
Directions
- Prepare cake as directed on package.
- Place cherries in medium bowl. Pour 1 cup boiling water over. Let stand until softened, about 10 minutes. Drain and pat dry. Mix cherries and brandy in small bowl.
- Place ice cream in large bowl. Mix in cherries, semisweet chocolate and pecans. Cover ice cream and freeze until firm, about 2 hours.
- Slice Vanilla Bean Cake into 2x2 inch pieces, sliced in thirds. Place one scoop of ice cream atop each. Drizzle 1 1/2 teaspoons brandy over each serving.
