Vanilla Cake with Sour Cherries and Pecan Ice Cream

Homemade Vanilla Cake Mix Recipe

Ingredients

    • For Cake

    • Full box Vanilla Cake Mix
    • 2 large eggs
    • 1 stick butter (4 oz.) - melted
    • 1 cup milk
    • For Topping

    • 1 cup dried cherries
    • 1 cup boiling water
    • 4 tablespoons brandy
    • 1 1/2 pints vanilla ice cream- slightly softened
    • 4 tablespoons semisweet chocolate - chopped
    • 1/3 cup pecans - chopped and toasted

Directions

    • Prepare cake as directed on package.
    • Place cherries in medium bowl. Pour 1 cup boiling water over. Let stand until softened, about 10 minutes. Drain and pat dry. Mix cherries and brandy in small bowl.
    • Place ice cream in large bowl. Mix in cherries, semisweet chocolate and pecans. Cover ice cream and freeze until firm, about 2 hours.
    • Slice Vanilla Bean Cake into 2x2 inch pieces, sliced in thirds. Place one scoop of ice cream atop each. Drizzle 1 1/2 teaspoons brandy over each serving.
