Ingredients
- Full box Apple Cake Mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup applesauce
- 2 large apples (braeburn or golden delicious)-peeled,cored and chopped into 1/4-inch cubes
- 4 teaspoons powdered sugar
Directions
- Preheat oven to 350° F. Combine eggs, oil and applesauce and whisk until blended. Add mix. Quickly and firmly fold together until smooth. Fill mini muffin tins 2/3 full with batter and top with chopped apples. Sift sugar over cakes and bake until golden brown, about 24- 26 minutes. Let cool and serve.
