Apricot Almond Drop Scones

Ingredients
For Scones
- Full box Scone Mix
- 1 large egg
- 1/2 cup milk
- 1/3 cup butter-melted
- 1 teaspoon almond extract
- 1/2 cup dried apricots (2 3/4 oz.) - finely chopped
- 1/2 cup almonds- sliced
For Egg Wash
- 1 large egg - beaten for egg wash
- 1 tablespoon milk
Directions
- Preheat oven to 400° F. Combine one egg, 1/2 cup milk, butter, and almond extract; whisk together. In second bowl, combine dry mix with apricots and almonds. Add dry ingredients to wet ingredients and mix well. Drop heaping spoonfuls of dough 2-inches apart on lightly greased baking sheet. Brush tops and sides with egg wash and bake for 13-15 minutes, or until golden brown.

This is one of my favorite scone recipes- combining chewy, sweet apricots with the crunch of sliced almonds in our flavorful vanilla scone mix. The pairing of texture and flavor is unmatchable. These are perfect with a hot cup of coffee early in the morning, or an after dinner treat. No matter how you snack on them though, they're sure to be gone before you know it.
